Recipe: The easiest Spaghetii Squash & Meatballs

Yesterday, at 3pm I suddenly realised that I had not organised anything for dinner. Hey, it's 3pm I hear you say you have plenty of time but hey, not in my house... 3pm is the start of hell in my house! The baby was due to wake up & then would need to be changed, dressed, booby fed then the toddler would need afternoon tea as well then there is play time with them both then at 4pm it's the baby's dinner time which takes alllllll of my patience (& a mop!) then it's bathtime for them both then it's the toddler's dinner time then it's 'quiet play' with them both then it's booby time for the baby then it's bedtime then it's adult dinner time...  Phew, I'm exhausted thinking about it (& I've got to do it all again this afternoon too!)
I like to organise dinner just after lunch or even earlier & pop it into the slow cooker (Crockpot) to make life easier for myself. For some reason, I just wasn't organised and as I started to search the cupboards for dinner I spied the spaghetti squash on the bench! Perfect!
Turn the Slow Cooker on.
Cut the squash in half & scoop out the seeds and place cut side down in the cooker.
Add (raw) meatballs around the squash or if you want to truly cheat then do what I did... I just scooped teaspoons of mince around the squash - I didn't make meatballs!

Add the sauce or if you want to cheat (like I did)... just add a big can of crushed tomatoes & dump it on top of the mince (I didn't make a sauce or even cut any onions). I then tossed in some herbs from the garden (rosemary & parsley) then dove into my spice rack & sprinkled some garlic powder & basil on the top, once again ..I.Did.Not.Stir!
I cooked this in the Slow Cooker on High for 2.5hrs or you can set the cooker to low & leave to cook all day.  It is cooked when the Spaghetti Squash can be scraped out with a fork (or spoon).
Serve up & munch away!
A handy tip: you may like to strain the cooked Spaghetti Squash in a sieve or colander before serving because it is very juicy!
